Jeffers Cooks halibut/salmon nuggets with lemon-rosemary butter

Pan-seared halibut and salmon, marinated in garlic, lemon, and olive oil. Topped with a homemade lemon-rosemary butter and served with zesty quinoa salad.

Marinade:

  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 2 garlic cloves, smashed

Lemon-Rosemary butter:

  • 1/2 stick unsalted butter
  • 1 tbsp lemon juice
  • 1 tsp chopped rosemary
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • Zest 1 lemon

Quinoa Salad:

  • 1 cup quinoa
  • 2 cups water
  • 1/4 cup olive oil
  • 2 limes, juiced
  • 2 tsp cumin
  • 1 tsp salt
  • 1 tsp red pepper flakes
  • 1 1/2 cups cherry tomatoes, halved
  • 1 can black beans
  • 1 can corn kernels
